Instructions

  1. In a medium bowl, whisk together the all-purpose flour, sugar, yeast and salt.
  2. Add the warm water and olive oil, and stir the mixture with a wooden spoon until the dough just begins to come together.
  3. Scrape the dough onto a well-floured counter top and knead the dough for three minutes until smooth, slightly elastic, and tacky.
  4. Place the dough into a lightly greased bowl, cover with a kitchen towel, and allow to rise for 2 hours or until doubled in size.
  5. Place pizza steel on the second to top rack of your oven and preheat to 550°F (285°C) for a minimum of 1 hour.
  6. Prepare the sauce by mixing pureed tomatoes, minced garlic, olive oil, pepper, and salt in a small bowl.
  7. Separate the dough into two equal portions and let rest for 5-10 minutes.
  8. Stretch one ball of pizza dough into roughly a 10-inch circle and transfer to a pizza peel dusted with semolina and flour.
  9. Top with sauce, parmesan cheese, mozzarella cubes, and torn basil leaves.
  10. Slide pizza onto the heated steel and bake for 7-8 minutes until crust is golden and cheese is bubbling.
  11. Remove from oven, drizzle with olive oil, add additional parmesan and fresh basil, then slice and serve immediately.
